Hi at all,
is it possible to run a vegetronix vh-400 moisture sensor with ESPEasy?
How could this be done?

It looks just like a analog input, so you could use the analog input pin for it.
Make sure you do not exceed 1V on that pin so add a resistor voltage divider.
Some ESP boards have already some of those resistors present, which you may need to take into account.
And also make sure these sensors are sensing based on capacity, or else you may need to replace them very soon due to corrosion.

Ok, that seems to work, and when I use only 2 meters of cable the values seems to be valid, but I've got about 30m of cable an the values change every time I measure them up.
Is there a possibiltiy to get valid data over the analog port an the long cable?

I would say that you're asking to much of the hardware. Try to measure the voltage from a given power source and see what you get in the other end of the cable.

Long cables tend to work as an antenna.
You may want to try using either shielded cable or twisted pair cable like simple network cables.
Also the cable itself may have effect on the measured values, but when using those cables I mentioned, the values should be rather constant.
