There are many raspberry pi nas projects on the internet, but maybe not specifically for the pi 4 as it is the same as the others for that application.

I could be wrong here, if the value is 100 for dry and 0 for water, could the formula not do something like 100 - value? 100 become 0 and 0 becomes 100

While I do use a Raspberry Pi for testing, they are a bit limited. I find Linux on an old laptop makes a much better production environment.
