I do not know FHEM, I am using Domoticz. But You can create events "lamp_on" and lamp_off" which received from FHEM will switch relay. My Wemos D1 with DS18B20 reboots randomly in hours or days interval too.
So I send configuration periodically from Domoticz, to set correct values after reboot.
_dev13 and v2.0 too.
I have number of them on one power bus and they reboot independently, so I think it is not power issue.

The bad value is most likely as 85, exceptionally 0.
So send with rules and ignore the value of 85.
Even in the room or outdoors, such temperature does not often occur.

Shelly has got significantly smaller diameter than in wall box.
I think you can put two WAGOs between the wall of the box and the Shelly.
Plus you can use the Shelly connector and the switch contacts to divide the wires.

At first I suggest using different GPIOs - I am using RX and TX pins from new Sonoffs connector.

It is simple problem.
On picture I can see you power your TM1637 from 5V on Wemos.
If you look at the TM1637 datasheet, you can read:

Min. Log H = 0.7Vdd
0,7 * 5 = 3,5V
But your ESP runs on 3,3V, so never reach 3,5v on gpio output.
Try power TM1637 from 3,3V pin

I have got six Sonoffs basic with V2.0-20180322.
Power failure occurs 4x per day and the resolution is still12bit.

No mega firmware is not fully functional. I use _dev13 with complex rules and cannot use mega for this. GPIO16 is not very optimal choice for this.
So resolution can be limited by ESPEasy firmware.

With old Sonoff Basic I use GPIO14 for DS18B20.
New versions of Sonoffs basic has got GPIO14 no more.
So I use RX pin ( GPIO3 ) for DS18B20 connection without any problem.
For safety, I switch off serial port in "Tools" and serial logging too.

I got new version of Sonoff Basic last day. ( only 4 pin connector )
I flash it right now with mega_dev13 ( last whitch works ok for me ).
All works OK like older versions of Sonoff.

RX pin only receives serial, so using it - no flickering, because no sender in your circuit.

Or change your circuit:
3.3v ---- R1 ------ optodiode -----GPIO0

And switch opto with log 0 instead log 1

If you mean TM1637 instead of MAX1637,
switch CLK and DIO for both displays by multiplexer CMOS 4053 driven with some other gpio.
First switch to display you want and send normal command for display.
