Nearly any small N-FET should work (BS270, BSS138, 2N7000, 2N7002.....) Just one point: These FETs are somewhat sensitive to electrostatic discharge. Maybe I misunderstood but:

If you short GPIO to GND the PIN state I can guess will always be LOW (zero).

To have a real pull-down you should have a resistor (I normally use 10k) between GND and the GPIO.

I am not sure you need a specific plugin as far as I understood this sensor gives an analog output so you can use it with the Analog reading of ESP8266 or via a more accurate analog port expander (like ADS1115)...

ESP8266 ADC pin range is indeed 0-1VDC !! watch carefully!!

If you are using a dev board (NodeMCU, Wemos, etc) most probaly they have a voltage divider on board (tipically 100k/220k) to have the AD0 (not ADC!) pin accepting 0-3.3VDC
