I'm not familiar with northern EU standard, in Italy the junction boxes are 10x10cm (9x9 internal space) and standard wall plug is 85x55mm so plenty of space

Nearly any small N-FET should work (BS270, BSS138, 2N7000, 2N7002.....) Just one point: These FETs are somewhat sensitive to electrostatic discharge. I avoid all copper on the antenna area + 2..4 mm around. For some devices i'm using an ESP-07S. I experienced similar behaviour and then I realize in my breadboard connections I was powering up the OLED with 5V; I then powered with 3.3V and all those glitches and unresponsiveness disappeared; maybe you can check the VCC!

Maybe I misunderstood but:
- If you short GPIO to GND the PIN state I can guess will always be LOW (zero).
- To have a real pull-down you should have a resistor (I normally use 10k) between GND and the GPIO.

But look at this, in esp it is showing value ok. I have also second esp with only hdc1080 and it is also not working with domoticz, but in esp see it show values... I'm not familiar with Domoticz so I can't help further; what did you get when you run I2C scanner? Definitely 2 devices on same addres...

I am not sure you need a specific plugin as far as I understood this sensor gives an analog output so you can use it with the Analog reading of ESP8266 or via a more accurate analog port expander (like ADS1115)...

ESP8266 ADC pin range is indeed 0-1VDC !! watch carefully!!
If you are using a dev board (NodeMCU, Wemos, etc) most probaly they have a voltage divider on board (tipically 100k/220k) to have the AD0 (not ADC!) pin accepting 0-3.3VDC
