In my first screen-shot I'm using two 'inject' nodes that inject a number... 0 and 1 into the MQTT-Out node. Your mqtt config is fine PROVIDED the format of the topic matches the MQTT nodes in Node-RED. I've given up using the forward slash at the start of the topic as it's not recommended in the MQ...

Here are some screen-shots that might help. It's a very simple test flow to turn on/off an LED connected to pin 15 (D8) on the Wemos. You can obviously change this to use other pins. First of all - you can't use two normal 5mm LEDs in series (driven from the Wemos +3.3V line) as the forward voltage drop across each LED is approx 1.8V. The ESP8266 and Wemos D1 Mini are +3V3 devices - so please don't connect +5V to them. You can use a transistor to buffer the ESP8266 to the 5V LEDs or even a relay or a level shifter. Looking at your photo it would appear you are using the on-board Rainsun antenna.

If you plan to use the external antenna (to get an increased WiFi range) then you will need to move the 0-ohm resistor (not an easy task as I found to my cost!!).

Yes - I would use a 330uF or 470uF with a 0.1uF (or 100nF) in parallel.

The large capacitor acts as smoothing capacitor whilst the small one should deal with any nasty spikes on the PSU rail.

Yes it is - how strange?? I've bought about 40 Wemos D1 Minis (over the last 18-months for my IoT Computer Club) from Banggood and Ali-Express. Some are real ones, others are most certainly clones. I have an ESP-01S (on a breadboard) that runs off of an USB power adapter type HW-131.
This device would only manage 20 or so minutes of up-time before it rebooted.

I've just added a 470uF and 100nF to the breadboard, so it will be interesting to see how long it stays UP.

I think I have some 470uF capacitors so I'll lash-up another test-rig and see what happens.

I think having a 100nF capacitor close to any active device is 'classic textbook stuff' and very sensible.
