can i use this HB100 Microwave Motion Sensor as a switch (like a pir sensor) in esp-easy

No, a sensor like this gives an analog output. Basically a sine wave like signal on top of some unknown offset voltage. The frequency of the signal depends on the velocity of movement in the view of the sensor. The amplitude depends very strongly on the shape, material and distance between the sensor and the moving object.

Best advice would be to build it into an Arduino project using one of the examples that's floating around the internets, and then build that into an ESPEasy Pro Mini Extender that sends its pre-processed results to the ESPEasy.
