could somebody give me some advise how to configure the notification part, to send a email by using gmail? Or is there an other provider to send it?

The Gmail server requires SSL/TLS.
That's currently not yet supported.
You could try SMTP2go.
Their free subscription allows for 1000 mails per month, max 30 per hour.
You can create passwords for each node and view statistics on mails sent.

My solution was to use one of the 4 email address supplied by my by ISP
to send the email using port 25 to my gmail account..
So my IoT devices have their own 'sending email' address

I've tried smtp2go set up an account but unfortunately I'm still getting an error in the log file.
my setting on the notification is:
Domain: www.smtp2go.com (tried as well smtp2go.com)
Server: mail.smtp2go.com
Port: 2525 (tried as well 25)
plus user name and pw created on smtp2go homepage. Is there a wait time, till I could use it?
I see in the log as well: Plugin 001 mta: timeout

Domain (the domain name of the 'sender' for which you're sending mail): gmail.com
server: mail.smtp2go.com
Port: 2525
Sender: (the address shown to the receiver as being the sender) yourname@gmail.com
Receiver: (probably your own address) receiver@gmail.com
User/pass: Whatever you created in SMTP2go
Don't forget to enable the notification and you can test it with the test button.
