mqtt event logging?

I have various esp's gathering data around my home and sending to my own mosquitto based mqtt broker. What I'd like is a means of automatically logging select mqtt traffic to .csv or .xls files somewhere on my lan.

This is the closest I have come to what I am looking for Steve's MQTT DataLogger but I'd like it to run as a background / start at boot service.

I don't find a readily available package for doing this at my programming level.

Suggestions?

Currently I have Linux Mint 19, RPi Jessie and one old Win XP installation.

My scripts are Windows based (run them on some virtual machine). I might upload it to my GitHub page if more are interested.

I am using Mosquitto to NodeRed to SQLite. I used a script from Pete Scargill - tech.scargill.net
Developed mostly for RaspberryPI with probably more than you want or need, but I suspect you are able to figure out most of what the script is doing and use parts for what you need.

NodeRed has a learning curve, but is not difficult and can do a lot of neat tricks.
