I flashed a sonoff Basic old version with firmware mega-20181204
Yesterday it worked, but this morning it's unreachable.
Is this firmware reliable ?
Which firmware is the best for that device ?
How can we troubleshoot this ?

20181204 is pretty old. Why not try the latest?

Just for reference, the problems with WiFi instability started around 201803, so builds between March 2018 and roughly Sept 2019 were less stable regarding WiFi.
If you are able to flash it via serial, then you can use all 1M builds, (assuming you are running an 1M Sonoff). If you want to use OTA, you should use the minimal OTA builds. (and use 2-step OTA)

Well that depends on a number of factors.
- What do you consider "latest release" ?
- What instability do you refer to ?
- What kind of instability do you mean (and what is bad for your use case) ?
The known instabilities present in the current latest nightly builds are very node specific.
It looks almost like it may be related to some batches of Sonoff Basic units.
These instabilities are no longer causing crashes and reboots, but may be like slow WiFi connection and frequent reconnects to access point and/or MQTT brokers for example.
Also there is the 'instability' regarding not always reacting to network activity, which can often be resolved by setting the WiFi to "no sleep", use fixed WiFi channels, enable Gratuitous ARP and switch to B/G only.
