UVR61-3 with DL bus

That device is supported via plugin P092 Heating - DL-Bus (Technische Alternative), available in the Collection C builds. You'll have to flash that on your unit to be able to use the plugin.

I've already looked at this manual but I don't understand anything about Arduino to do the recording and editing for the Wemos Mini I normally use Esphome on my IOT

Easiest would be to connect the ESP to your computer via USB, and use a Chrome or Edge browser to navigate to https://td-er.nl/ESPEasy/latest/ where the latest pre-release of ESPEasy is available.
Then select the CollectionC build, and use the Connect button to get that onto your unit (you can use the options there to wipe another software from the unit if that's already installed).

After flashing the ESP should be restarted, and will start a new WiFi access point that you can connect to from smartphone, tablet or laptop, to connect the unit to your WiFi. Once that's completed you can configure the unit via your browser from either smartphone, tablet, laptop or desktop computer.

In contrary to ESPHome, ESPEasy is intended to be as flexible out of the box, the fact that there are so many different build configurations is because of the available features and high number of plugins, that just can't fin in a single build for the most common ESPs with 4 MB Flash.
There is however also a MAX build available for ESP32 and ESP32-S3 units that have 8 or 16 MB Flash installed, and these builds include all available plugins and features.

Thank you very much, I managed to install espeasy, my question is how to connect the esp to the UVR61-3 and how to connect it
