I am an electronics enthusiast and I would like to get closer to the world of esp32, I would like to start with the P021 plugin. First question: is it possible to install sketches or custom libraries using this firmware? like AutoConnect for wifi?

You'd best start with reading up on the documentation (that can be a bit overwhelming, though...), to find out how ESPEasy is intended to be used: As a generic platform for IoT sensors (in a broad sense of that word), that can exchange data with home automation platforms like Domoticz, Home Assistant etc.

To use a specific 'plugin' you choose an available build, for the ESP hardware you have available (any ESP32-based model strongly endorsed). For a 4MB-flash equipped unit choose a Collection os more specialized Climate, Display Energy, or Neopixel build, for an 8MB- or 16MB-flash unit, choose the matching MAX build that includes nearly all features and plugins (sensors and controllers).
