You are trying to use the wrong plugin. The 7-segment display plugin also has support for the MAX7219 chip, as many 8-digit 7-segment displays use that chip, but for the MAX7219 Matrix displays, like yours, there is another plugin, Display - MAX7219 Dot matrix display, available in the Display builds.

Hi Ath,
thanks for your prompt and accurate reply! As I am using firmware ESP_Easy_mega_normal_ESP8266_4M1m.bin (from easy flasher 3.5.2021) I do not see any [DEVELOPMENT] hardware. Which firmware version should I be using (burn to my esp) , where that display plugin would be available..?

Regards and Thanks!

You will need a DISPLAY build to have this plugin available.
You can download from the Github Release page, and use the Tools/Update Firmware (OTA) feature to do an in-place update with the ESP_Easy_mega_20211224_display_ESP8266_4M1M.bin file (in the bin folder) from the browser on your computer.
